This is everything, you could ever want in a quick and healthy vrat recipe.

I’m not really a big fan of vrat recipes. Either I prefer to make my own special vrat recipe and to be somewhat creative with the ingredients or to make this Aalu Bonda along with Aalu Raita. I know it sounds crazy, Potato? as in healthy vrat recipe? yes, not to mention the rich flavours drawn from Aalu raita, are so scrumptious.

Ingredients
  

For making Aalu Bonda

  • 3 Boiled potato (Medium-sized)
  • 1 tsp Oil
  • 1/4 tsp Cumin seeds
  • 1 inch Grated ginger
  • 1 Green chilli (Chopped)
  • 4-5 Curry leaves
  • 1/4 tsp Black pepper powder
  • Rock salt as required
  • 1 tbsp Chopped coriander leaves
  • 1 tbsp Roasted peanuts

For making the batter

  • 6 tbsp Singhara ka atta
  • Rock salt as required
  • 3-4 pinch Black pepper powder
  • 1/4 tsp Roasted cumin seeds
  • 6 tbsp Water
  • Oil for frying

For making Aalu Raita

  • 100 gm Curd
  • 1/4 tsp Black pepper powder
  • Black salt as required
  • 1/4 tsp Roated cumin powder
  • 1 tsp Chopped coriander leaves

For making Tadka

  • 1 tsp Oil
  • 1/4 tsp Cumin seed
  • 1 Green chilli
  • 4-5 Curry leaves

STEPS TO MAKE AALU BONDA

STEP 1

Boil and grate 3 medium-sized potatoes.

STEP 2

Heat 1 tsp vegetable oil in a pan on medium flame. Add 1/4 tsp cumin seeds, 1-inch grated ginger, 1 chopped green chilli and 4-5 curry leaves. Sauté for a min.

STEP 3

Afterwards, add grated potatoes, 1/4 tsp black pepper powder, rock salt as required, 1 tbsp chopped coriander leaves and 1 tbsp roasted peanut. Sauté till everything gets combined. Turn off the flame and let it cool down for 5 mins.

STEP 4

For preparing Batter, I’m taking here 6 tbsp singhara ka atta, salt as required, 3-4 pinch black pepper powder and 1/4 tsp roasted cumin powder. Furthermore, pour 6 tbsp water little by little and stir well.

STEP 5

Now, make round shaped balls from it and Dip each ball in atta mixture.

STEP 6

Pour the vegetable oil to heavy bottom non-stick on low to medium flame. When the oil turns hot, gently drop one by one into the oil on low to medium flame. After a min, flip them one by one and turn the flame to medium. Fry them until they turn light golden brown.

STEP 7

Take them out and drain the oil. Place them on napkin or paper towel in a plate to absorb excess oil.

STEP 8

In a bowl, whisk 100 gm curd until smooth. Now, add boiled and evenly cut potato, black salt, 1/4 tsp black pepper powder, 1/4 tsp roasted cumin powder and 1 tsp chopped coriander leaves. mix everything well.

STEP 9

For making Tadka, add 1 tsp oil in a small pan. Turn the flame low and add 1/4 tsp cumin seed,1 green chilli and 4-5 curry leaves. Gently mix and add in the Raita. Mix very well.

STEP 10

Serve Aloo bonda along with Aalu raita.
