Any recipe that involves potato is a recipe that I love and today, I’m sharing one of my favourite light snack recipe Aalu Kurkure that’s been on repeat in my house since the IPL has started. Also, they’re the ultimate potato recipe and you can easily make them with just a few ingredients. Did I mention that they’re highly addictive and always a party hit?!
Aalu Kurkure
Ingredients
- 3 Potato (Large)
- 1 tbsp Chopped coriander leaves
- 1/4 tsp Black pepper powder
- Salt as required
- 1/4 tsp Red chilli powder
- 1 tsp Dry mango powder
- 1/4 tsp Garam masala powder
- 1 Chopped green chilli
- 1 tsp Ginger-garlic paste
- 1/4 cup Cornflour
- 3 tbsp Rice flour
- Oil for frying

How to make Aalu Kurkure
STEP 1
Peel 3 large potatoes and soak them in salted water. Cut it into even strips and wash in clean water for 4-5 times.
STEP 2
Transfer the potato strips into a large bowl and add 1 tbsp chopped coriander leaves, 1/4 tsp black pepper powder, salt as required, 1/4 tsp red chilli powder, 1 tsp dry mango powder, 1/4 tsp garam masala powder, 1 chopped green chilli and 1 tsp ginger garlic paste. Mix everything well. Afterwards, add 1/4 cup cornflour, 3 tbsp rice flour and mix again.
STEP 3
Pour the vegetable oil to kadhai or pan. When the oil turns hot, gently drop the potato strips into the oil and fry them on high to medium flame.
STEP 4
Take them out and drain the oil. Place them on napkin or paper towel in a plate to absorb excess oil.
STEP 5
Serve Aalu Kurkure along with ketchup and Mayonnaise. (Toss before serving.)
