When I think of Sweets, my mind immediately jumps to Rava barfi/ suji barfi, a nice combo of Semolina/suji, Ghee and condensed milk which can be made under 30 mins. If you never have any experience in making Sweets then consider this is the perfect recipe to start. This Rava Barfi recipe is a Sweet delight, dreamy, really easy to make and incredibly delicious, and guess what? you don’t even need an oven. This sweet dish can be used for any occasions or celebrations.
Rava barfi is a traditional sweet made from Rava / Semolina. Semolina or suji is the coarse, purified wheat middlings of Durum wheat. This sweet dish is famous for its nice texture, aroma and mouthwatering flavour. there are 6 ingredients to make this super easy recipe and I bet we keep 6 of them around in our kitchen pantry.

- 1 cup Semolina/ suji
- 70 g Ghee
- 4 tbsp Desiccated coconut
- 1/2 cup Water
- 3/4 cup sugar
- 1/2 tsp cardomon powder
- 2-3 drop food color (optional)
- 4 tbsp Milk powder
- Some pistachios and nuts (for garnishing)
Grease a tin or tray with ghee and set aside.
In a kadhai, Heat 70 g Ghee (clarified butter) Then, Turn the flame at low to medium and add 1 cup ( 175 g) Rava/ suji/ Semolina to it. saute till the Rava blends with ghee.
Afterwards, add 4 tbsp or 1/4 cup Desiccated coconut and continue to roast it till it turns light brown. keep aside.
For making sugar syrup, Take another kadhai or pan. add 1/2 cup water, 3/4 cup sugar. cook till the sugar dissolves. for better flavour, add some ground cardamom, To make Barfi more appealing, I’m adding 2-3 drop food colour ( this is optional) stir well.
Keeping the flame on low, add 1/4 cup ( 4 tbsp) milk powder. mix well till no lumps are present and the mixture gets thicken. ( you can add condensed milk instead of milk powder).
Add sugar syrup to roasted semolina. the flame should be at low. keep mixing till Rava/Semolina absorbs all the moisture completely and the mixture will begin to leave the pan.
Transfer the mixture to the greased tin or tray. gently shake the tin. sprinkle some sliced pistachios or nuts if you want and gently press it with a spoon. allow it to cool down for 5 mins.
Cut the mixture into square or rectangle pieces and let the barfi cool down for 25-30 mins.
Turn the tin upside down and gently ease the Rava Barfi out.
Serve the Rava Barfi or you can store it for a month in an airtight container.
